Auf dem selben Wege. Du musst sie nicht einmal *einzeln* definieren; cmd-alt-I öffnet im Finder ein *schwebendes* Infofenster, dann kannst du alle zu ändernden Dokumente auswählen und alle auf einmal dem gewünschten Programm zuweisen.
Ähnliches lässt sich auch mit einem AppleScript Droplet erreichen, in dieser Art:
